Calcium glutamate is a white crystals or crystalline powder. It is practically odorless, has a specific characteristic taste. This salt substitute dissolves well in aqueous medium, is obtained by microbiological synthesis. The supplement increases the sensitivity of the receptors located on the tongue and as a result enhances the taste sensations. In the food industry, E 623 is used as an additive to enhance the taste and aroma of food. It is used in broths, semi-finished products, snacks and many other food products. E 623 is also found in spices intended for retail sale, but sodium glutamate is most commonly used for this purpose.

Calcium glutamate is used in pharmaceuticals in the treatment of certain nervous and mental diseases and disorders.
