The additive is completely soluble in water, has a medium solubility in ethanol and is insoluble in ether. E 629 is found in the tissues of animals and fish (mostly marine), in fungi. Obtained by the fermentation of glucose.
Calcium guanylate is rarely used in the food industry. Sodium inosinate and sodium guanylate are commonly used to enhance the taste and aroma of products. The additive E 629 can be found in some spices, meat products and sausages, semi-finished soups and pasta, semi-finished products, canned meat and fish.
E 629 can have adverse side effects. People suffering from bronchial asthma should be careful because calcium guanylate often provokes attacks. Also: causes severe allergic reactions, leads to dehydration, worsens the condition of patients with gout and rheumatism. The substance should not be used in baby food, should not be taken by pregnant and lactating women. Some countries (New Zealand and Australia, for example) are refusing to use the supplement because of the possible adverse effects. No maximum daily amount safe for human health is indicated.
