Maltitol is white crystals or white odorless crystalline powder. The taste is pronounced sweet and is equal to about 80% of the sweetness of sucrose. The additive is resistant to hydrolysis, dissolves well in water, significantly worse in alcohol, does not dissolve in fatty solvents. It is obtained from starch (corn or potato) by catalytic hydrogenation of maltose or syrups with a high maltose content. The caloric content of E 965 is significantly lower than that of fructose or sugar. It does not significantly affect the level of glucose in the blood, so it can be consumed by diabetics.

Use

In the food industry, the substance is used to sweeten desserts and similar products. It is part of ice cream, jam, marmalades, jellies, fruit products with icing, pasta (whose caloric content is reduced), chewing gum, caramel, candy, chocolate, soft and soft drinks, dried fruits. Also, the substance can be found in mustards, sauces, special dietary products.

In pharmaceuticals, maltitol is used to sweeten tablets, chewable vitamins, syrups and more.

Impact on humans

There is no maximum daily amount in the specialized literature that is safe for humans. The food supplement E 965 is considered harmless to the body, but it is known that the consumption of more than 90 g of this sugar substitute leads to bloating, diarrhea, flatulence. At the same time, the substance does not cause tooth decay and does not particularly affect blood sugar levels.
