Method of preparation :
Chop the lettuce leaves in a salad bowl and add the peeled and diced pears, which you sprinkle with the juice squeezed from 1/4 lemon. Then add the parmesan (also diced), arugula and nuts of your choice.
Make a sauce of olive oil, vinegar, sugar, salt and pepper. Season the salad with it and serve.
