Required products :

  • 170 grams of flour
  • 425 milliliters of fresh milk
  • 125 milliliters of water
  • 125 grams of boiled bouquets of broccoli
  • 125 grams of grated cheddar cheese
  • 6 eggs
  • 45 grams of butter + a little more to spread on the dish
  • 30 milliliters of oil + extra for frying
  • 2 tablespoons grated Parmesan cheese
  • 1 teaspoon (Dijon)

 

Method of preparation :

Put the broccoli in boiling salted water for 5 minutes, then drain and divide the inflorescences into small pieces.

Melt the butter in a saucepan, add 45 grams of flour, stirring.

Gradually pour 300 milliliters of milk and let the mixture boil, stirring constantly.

Then remove the pan from the heat and add the grated cheddar cheese, mustard and other spices as desired.

Divide 4 of the eggs into yolks and whites. When the sauce has cooled, put the yolks in it.

Beat the egg whites and gradually add them together with the broccoli in the sauce.

Make dough for the pancakes. Mix 125 milliliters of water with the same amount of milk and 30 milliliters of oil. In a bowl pour 125 grams of flour, put a pinch of salt, the remaining 2 whole raw eggs and mix until you get a liquid dough, which is left to stand for 15 minutes.

Bake golden pancakes on both sides, spread them with cheese sauce and roll.

Arrange in a greased pan, sprinkle with Parmesan cheese and bake for about 20 minutes in a preheated oven until the filling begins to thicken.
