How To Cook Baked Potatoes With Avocado And Garlic Sauce - Recipe

Required products :

  • 700 grams of potatoes with a thin skin
  • 2-2.5 tablespoons olive oil
  • 1 teaspoon dried garlic powder
  • medium bunch parsley
  • freshly ground black pepper
  • left

For the sauce:

  • 1 large avocado
  • 2 cloves garlic
  • 1/2 tablespoon lemon juice
  • 60 milliliters of olive oil
  • freshly ground black pepper
  • left


Method of preparation :

Wash the potatoes thoroughly under running water using a brush. Put them in a saucepan, fill with water and place on the stove.
Once the liquid boils, add salt, reduce the heat and cook until cooked through (20-25 minutes).

Meanwhile, make the avocado sauce.

Cut the fruit in half, peel it and remove the stone. Then cut into several pieces, which you put in the bowl of a blender. Add garlic, lemon juice, season and puree. Finally, pour a thin stream of olive oil, beating the sauce until smooth.

Drain the water from the boiled potatoes and leave them for 10 minutes to dry.

Turn the oven to 200 degrees. While hot, arrange the potatoes in a lightly greased pan and press them with the bottom of a cup to flatten and crack.

Drizzle each potato with about 1 teaspoon of olive oil, add salt, sprinkle with garlic powder and ground black pepper.

Place them in the already hot oven and bake for 20-30 minutes until their surface is golden and crispy.

Once ready, remove from the oven, sprinkle with fresh parsley and freshly ground black pepper, pour over the avocado sauce and serve immediately.
