We offer you an option for making a dessert from black rice and coconut milk. It is different from the familiar rice milk, so if you are curious, just give it a try. And the finish is optional ..

Required products :

  • 1 cup black rice
  • 1/4 tea cup sugar (brown or maple syrup)
  • 1/4 teaspoon salt
  • 1 1/2 cans of coconut milk (600 milliliters total)
  • 1 1/2 teaspoon water
  • 3 eggs

for topping:

  • coconut cream, caramelized banana, cream and others.

Method of preparation :

Soak the rice overnight or for a minimum of 6 hours (otherwise, cooking the rice will take all day).

Put the drained rice in a saucepan, add sugar, salt, 1 can of coconut milk (400 milliliters) and the whole amount of water. Cook until the liquid is absorbed in half and try if the rice is soft and can be chewed, if not, you need to add another 1 cup of water and continue cooking.

When the rice is ready, cool it completely.

Add the remaining coconut milk and eggs. Mix well and try, optionally add more sugar.

Pour the mixture into a large pan or use small individual molds. Cover with foil and bake for 30 minutes at 170 degrees.

Remove from the oven and put in each portion of cream (you can keep some of the cream from the cans of coconut milk), coconut cream and anything you think would suit you.
