Required products :
- 1 teaspoon olive oil
- 10 slices of bread for sandwiches
- 150 grams of blueberry jam
- 150 grams of fresh blueberries
- grated rind of half a lemon
- 4 eggs
- 560 milliliters of soy milk
- 3 tablespoons honey
- 1 teaspoon vanilla extract
- 1 teaspoon cinnamon
Method of preparation :
Coat each slice with jam and cut into triangles. Arrange them in a rectangular tray in two rows, overlapping the wide part with the corner. Sprinkle the blueberries and lemon zest on top.
Beat the eggs with the milk, honey, vanilla and cinnamon. Pour half of this mixture on the bread and leave to soak for 15 minutes.
Then pour the remaining amount and bake for 30 minutes at 190 degrees.
Serve with cream or ice cream if desired.
