Necessary products :
500 grams of white flour

  • 200 grams of rye flour
  • 1 teaspoon salt, sugar and dry yeast
  • 1 tablespoon olive oil
  • 45 grams of black olives - pitted
  • 50 grams of shredded feta cheese (or cow's cheese)

Method of preparation :

Mix the flour, sugar, salt and yeast in a large bowl. Add olive oil to them and start adding warm water while kneading a soft dough. Add the olives and the crushed feta cheese.

Knead it for about 8-10 minutes on a floured surface to get an elastic dough. Leave to stand for 1.5 - 2 hours in the heat to rise.

Spread and flour a rectangular bread pan.

Knead and shape the dough, put it in the prepared pan and leave it to rise for the second time. When it doubles in volume, bake the bread for 30-40 minutes at 190 degrees in a preheated oven.

Make sure it's ready by tapping its crust, if you hear a hollow sound, it's time to take it out of the oven. Sprinkle with a little water and cover with a clean towel.

Cool completely before cutting.
