Required products :

for almond marzipan paste:

  • 250 grams of sugar
  • 250 grams of grated almonds
  • 2 eggs, broken
  • 1 teaspoon almond essence

for cake:

  • 175 grams of butter or margarine
  • 175 grams of brown sugar
  • 3 eggs
  • pinch of salt
  • 1/2 teaspoon spice mix - allspice, nutmeg, cinnamon
  • 350 grams of soaked raisins
  • 55 grams of sliced ​​orange peel, lemon and more.
  • grated rind of 1/2 lemon
  • 1-2 tablespoons apricot jam
  • 1 egg, beaten for spreading

Method of preparation :

For the almond paste, place the sugar and ground almonds in a bowl, add the egg and mix until smooth.

Add the almond essence and knead the dough for one minute.

Roll out 1/3 of the almond paste with a diameter of 18 centimeters and put the rest in a bowl.

Preheat the oven to 140 degrees and grease the pan.

For the cake, beat the butter with a mixer until fluffy. Gradually add the eggs and sift the flour and spice into the mixture. Finally add the dried fruit, zest and lemon zest, stir.

Put half of the mixture in the pan. Smooth it and cover with almond paste. Pour the remaining mixture on top and smooth.

Bake in a preheated oven for about an hour and a half. Check with a stick if the cake is ready. Cool to room temperature.

Spread the cake with apricot jam. Divide the separated marzipan paste into two parts, roll out half and cover the cake. From the remaining amount make balls and decorate the cake.

Brush the marzipan paste with egg and grill for about 2 minutes until the almond paste is golden brown.
