Required products :

  • 2 1/2 tea cups roasted and chopped walnuts
  • 1 cup high-fat liquid cream
  • 1 tablespoon espresso coffee powder
  • 1/2 teaspoon salt
  • 1 tablespoon honey

 

Method of preparation :

Pour the walnuts into a medium bowl.

Heat the cream in a thick-walled bowl and add the espresso and salt. Heat until small bubbles appear where the liquid comes in contact with the container. At this stage, add honey, wait for the cream to boil, reduce the temperature and cook, stirring constantly, with a wooden spoon for about 15-20 minutes. If you have a thermometer, use it, the temperature of the mixture should be 126 degrees. Remove from the heat.

Pour the resulting caramel over the nuts and stir. Put the dish in the refrigerator for 10-15 minutes to thicken the caramel a bit. Then pour on a sheet of parchment paper or some form, wait for it to cool completely and cut into pieces. Wrap each in parchment like candy.
