You do not need to give up rice when following a keto diet. Use cauliflower, blending it finely, resembling the size of rice.

Required products :

  • 1 medium-sized head of cauliflower
  • 2 tablespoons avocado oil (or olive oil)
  • 3 medium-sized onions
  • 1 and 1/2 teaspoons ginger, grated
  • 1 and 1/2 tablespoons tamarind sauce
  • 2 teaspoons toasted sesame oil
  • 220 grams of eggs
  • 1/2 hot pepper, cut into circles
  • sea ​​salt to taste
  • 1/4 teaspoon fresh coriander

Method of preparation :

Divide the cauliflower into florets and blend it in a food processor to the size of rice.

Heat the avocado oil (or olive oil) in a deep cast iron skillet over high heat. Fry the blended cauliflower, onion and grated ginger until golden brown, stirring constantly. Pour tamari sauce, sesame oil and stir.

Beat the eggs in the center of the wok and stir for about 2 minutes, then mix with the cauliflower. Remove from the heat and garnish with hot pepper. Season with salt, sprinkle with fresh coriander and serve.
