Required products :

  • 130 grams of biscuits (shortbread)
  • 150 grams of butter
  • 800 grams of mascarpone
  • 100 milliliters of liquid cream (20% fat)
  • 4 tablespoons flour
  • 4 peaches
  • 8 tablespoons honey
  • 1 lemon
  • 1 lime
  • 2 eggs
  • 120 grams of powdered sugar


Method of preparation :

Use a round detachable cake tin. Cover the bottom with a sheet of parchment and then place the ring.

 

Remove excess paper.

Turn on the oven to preheat (200 degrees) while you prepare the dough.

Break the biscuits, put them in a blender and grind until they turn into crumbs.

 

To them add the liquefied butter and stir, it should resemble wet sand.

 

Distribute evenly on the bottom of the form and press to obtain a solid base.

Place the dish in the preheated oven for 10 minutes.

Remove the cheesecake from the oven, wait 15 minutes for it to cool slightly, then use a hot sharp knife to separate it from the walls of the form and remove the ring.

When the cake has cooled enough, put it in the refrigerator for at least 2 hours.

During this time, start making honey peaches.

Cut each fruit into two pieces and remove the stones.

Coat the inside of the peaches with liquid honey and bake for 20 minutes in the oven at 200 degrees. They should soften and the juice that separates will mix with the honey.

 

Serve the cooled cheesecake with warm or hot peaches, drizzled with fruit-honey syrup.
