How To Cook Chicken Legs With Garlic, Mushrooms And Olives - Recipe

Required products :

  • 1 kg of skinless chicken legs
  • 2 tablespoons olive oil
  • 1 head of garlic, divided into cloves
  • 1 small red onion, finely chopped
  • 230 grams of mushrooms, cut in bulk
  • 1 cup Kalamata olives, pitted
  • 1 sprig of fresh rosemary
  • 1 tea glass of white wine / or chicken broth /
  • salt and pepper to taste
  • fresh parsley and rosemary

Method of preparation :

  • Heat 2 tablespoons olive oil in a large skillet over medium heat.
  • Season the chicken legs with salt and pepper and fry for about 3-5 minutes on each side.
  • Remove to a plate and sauté the garlic cloves in the same pan for 2 minutes.
  • Add onions and mushrooms and cook for another 3-4 minutes, stirring often.
  • Add the wine (or chicken broth), fresh rosemary and parsley and distribute the chicken legs in the pan.
  • Stir, cover and reduce the heat.
  • Cook for about 15 minutes on low heat and in the last 5 minutes add the olives.
  • Season with salt and pepper to taste and serve.
