Required products :

  • 450 grams of minced chicken
  • 1 teaspoon oil
  • 3/4 tea cup celery stalk, chopped
  • 2 1/2 teaspoons cauliflower rice
  • 1 medium onion head
  • 120 grams of hot peppers from a jar, cut
  • 1 tablespoon finely chopped garlic
  • 1 1/2 teaspoons hot pepper
  • 1 1/2 teaspoon chicken broth
  • 1 teaspoon cream
  • 1/2 teaspoon cream cheese
  • 1 teaspoon grated Monterey Jack cheese
  • 1 teaspoon cheddar cheese, grated
  • salt and freshly ground black pepper
  • coriander for serving

Method of preparation :

Heat the fat and fry the garlic and onion until soft. Add the celery, meat and cook for another 3 minutes, chopping the chicken.

Put the cauliflower in a saucepan and cook for 2-3 minutes, stirring to soften the vegetables. (Make your cauliflower rice like bold cauliflower roses.)

Add the chopped hot peppers, cream cheese, cream, grated cheese, broth and season.

Stir well and let the soup simmer for about 15-20 minutes.

Season to taste, then serve. Sprinkle each serving with coriander leaves.
