Required products :
- 1 tablespoon coconut oil or canola
- 1/4 tea green curry paste
- 1 1/2 teaspoons grated ginger root
- 1/2 teaspoon grated lime peel
- 1 medium onion, cut into crescents
- 1 teaspoon salt
- 1 red pepper, cut into sticks
- 1 cup chicken broth (preferably homemade)
- 4 tea cups shredded cooked chicken (you can use leftover roast chicken)
- 2 1/2 tea cups fresh peas (with pods)
- 1 can of 400 grams of coconut milk
- 1/4 tea cup basil leaves
- 1 tablespoon squeezed lime juice
- cooked rice or rice noodles for serving (optional)
Method of preparation :
Heat the fat in a pan and fry the curry paste with ginger and lemon peel. Stir and after a minute put the onion in the pan, season and fry until the crescents soften. Add the pepper, stir and pour the broth.
Once the liquid boils, reduce the temperature and 3 minutes later add the chicken, peas, coconut milk and cook for 5 minutes.
Finally add the lemon juice and basil.
Serve on a bed of boiled rice or noodles.
