Method of preparation :
Put the cherries, maple syrup and lemon water in a saucepan. Pour 4 tablespoons of water and cook for 8 minutes until the fruit is soft but still intact.
Remove a small portion of the sauce and add the cornflour, stir and return to the sauce. Simmer for 1-2 minutes until the sauce thickens. Set aside while cooking the chocolate.
For it, combine the cream, syrup, sugar and cocoa in a small saucepan. When it boils, reduce the temperature and stir until a sauce is obtained.
Put the remaining chocolate in a bowl and pour the cocoa mixture on top. Leave for 1 minute, then stir to melt the pieces.
Put a generous spoonful of cherry sauce on the bottom of a tall glass. Put a spoonful of vanilla ice cream on top. Drizzle with the chocolate sauce, then spread the remaining cherry sauce between the 4 cups before placing the next scoop of ice cream. You should finish with a decoration of spray cream, sprinkled with a little crushed hazelnuts, and on top - a cherry.
