How To Cook Christmas Cake With Candied Fruits And Nuts - Recipe

Required products :

  • 200 grams of Brazil nuts
  • 1 teaspoon macadamia nuts
  • 250 grams of halved cleaned dates
  • 200 grams of candied cherries
  • 100 grams of mixed fruit peels - pre-soaked and washed
  • grated rind of 1 lemon
  • 2/3 tea cup flour for cake
  • 1 teaspoon baking powder
  • 150 grams of sugar
  • 3 eggs
  • 1 teaspoon liquid vanilla
  • 2 tablespoons brandy

for decoration:

  • 1/3 tea cup apricot jam
  • 200 grams of mixed candied fruits (different types - oranges, cherries, peaches, etc.)

Method of preparation :

Mix the nuts, dried fruits, zest and grated lemon peel. Sift the flour with baking powder and add 1 teaspoon of juice, add sugar.

Mix the eggs with the vanilla and pour over the other products, stir.

Pour the mixture into a baking tray lined with baking paper. Bake for 1 hour and 30 minutes at 150 degrees - until dry.

Allow the cake to cool for 15 minutes, then remove from the pan and remove the baking paper. Punch and pour the brandy and wrap in cling film, leave for 2-3 days in a cool place.

Warm the apricot jam before serving. Arrange the candied fruits on the cake and spread them with apricot jam.
