Required products :

  • 500 grams of sifted wheat flour
  • 200 grams of corn flour
  • 130 grams of nettle (leaves)
  • 250 grams of butter
  • 300 grams of powdered sugar + more for sprinkling
  • 4 large yolks
  • vanilla
  • 25 grams of leavening agent
  • a small pinch of ground cardamom
  • 3 tablespoons orange peel (grated)
  • 2 tablespoons lemon peel (grated)


Method of preparation :

Put the nettles in a bowl, fill them with boiling water for 10 minutes, then drain the liquid, rinse the leaves with cold water and drain well.

Mix with the yolks and beat in a blender until a paste.

Pour the orange and lemon zest into a bowl, add the vanilla, cardamom, powdered sugar, baking powder and both types of flour. Combine the dry ingredients, then add the softened butter and nettle puree.

Knead the dough, make balls out of it (about 45 grams each, you get 33 pieces with this weight). Arrange them in a pan on a sheet of parchment and bake for 20 minutes in a preheated 190 degree oven.

Before serving, sprinkle with powdered sugar.
