Required products :

  • 6 cobs of corn
  • 1 large green pepper, chopped
  • 2 tomatoes, chopped
  • 1/4 cup chopped red onion
  • 1/2 bunch coriander (or parsley), chopped
  • 2 teaspoons olive oil (or more to taste)
  • salt and pepper

Method of preparation :

Heat a grill or barbecue and roast the corn until soft and some grains brown. It takes about 10 minutes, so take your time. When the corn cools, use a knife to cut the grains from the cob or clean in another way that is convenient for you.

Combine the roasted corn kernels with the vegetables. Season with olive oil, salt and pepper to your liking. Leave for at least 30 minutes before eating, this way the aromas will be released and the salad will taste better and more complete.
