Required products :

  • 1/2 cup butter
  • 1 and 1/2 cups cornmeal with baking powder
  • 1/2 cup universal flour
  • 1 and 1/2 cups buttermilk
  • 1 cup canned sweet corn
  • 2 eggs

* A tea cup is used to measure the quantities.

Required products :

Preheat oven to 220 degrees. Put the butter in a cast iron pan and melt it in the preheated oven.

Mix the corn with the universal flour in a large bowl. In another bowl, beat the buttermilk, sweet corn and eggs. Pour the wet ingredients into the bowl with the dry ones, add the butter and homogenize.

Pour the corn mixture into the pan and bake for 25-30 minutes or until golden brown. Remove from the oven and turn immediately over on a large serving platter. Cut into slices and serve.
