How To Cook Cream Of Apple And Pumpkin Soup With Walnuts And Marjoram - Recipe

Required products :

  • 2 tablespoons butter
  • 1 medium onion, finely chopped
  • 1 tablespoon ginger, freshly grated
  • 450 grams of diced pumpkin
  • 2 medium-sized apples, cut into cubes
  • 2 teaspoons vegetable broth
  • 1/2 teaspoon freshly ground black pepper
  • 1 teaspoon walnuts, chopped in bulk
  • fresh marjoram stalks

Method of preparation :

 

  • Melt the butter in a large saucepan over medium heat.
  • Add the onion and sauté for 5-6 minutes until soft.
  • Sprinkle with ginger and cook for another 30 seconds.
  • Add the diced pumpkin and apples, stir and simmer for about 2 minutes.
  • Add the vegetable broth and black pepper and bring the soup to a boil.
  • Reduce the heat and simmer for 15-20 minutes until the pumpkin is cooked through.
  • Remove from the heat and carefully puree until smooth. Season with salt and pepper if necessary.
  • Serve cream of apple and pumpkin soup hot, garnished with walnuts and marjoram leaves.
