Method of preparation :
Put olive oil in a pan and add the tomatoes, mash them and season them. Cook for about 30 minutes until a thick tomato sauce is obtained.
Cut the eggplant lengthwise and make several cuts diagonally. Sprinkle with salt and leave for a while, to relax their bitter taste.
Dry with paper and place in a tray. Drizzle with olive oil and bake for 30 minutes at 200 degrees until done.
At the last minute sprinkle, place the bread in the pan to bake.
Mix the mozzarella and eggplant in a pan.
Put 6 tablespoons of tomato sauce on each half of the eggplant, sprinkle with half of the grated cheese, some of the croutons and finally finish the cheese.
Bake for 4 minutes and serve.
