Required products :
- 1 teaspoon olive oil
- 1 teaspoon smoked paprika
- 65 grams of chopped chorizo (or spicy sausage of your choice)
- 4 eggs
- 50 grams of feta mermaid
- 2 green onion stalks, chopped
- parsley for sprinkling
- yogurt on request
Method of preparation :
Preheat the oven to high heat.
Heat a spoonful of olive oil in a pan, put the smoked pepper, sausage and fry it for about a minute on high heat. Transfer to a plate and beat the eggs in a hot pan. Cook them until they acquire a crispy crust on the underside. Sprinkle with sausage and cheese and transfer to the oven for 2-3 minutes or until the yolk is firm as desired.
Sprinkle with fresh onions and parsley. Serve with yogurt if desired.
