Required products :

  • 3 avocados
  • 1-2 tablespoons olive oil
  • the juice of 2 lemons
  • salt and pepper to taste

for the salad:

  • 1 cup quinoa
  • 3 tablespoons olive oil
  • 2 tablespoons apple cider vinegar
  • 2 teaspoons maple syrup
  • 2 teaspoons Dijon mustard
  • 1 teaspoon cumin
  • 1/2 teaspoon salt
  • black pepper to taste
  • 1 cup finely chopped cucumber
  • 1 cup finely chopped red pepper
  • 1/2 cup corn
  • 1 1/2 teaspoons boiled beans (or canned)
  • 10-15 basil leaves
  • 1/4 cup finely chopped coriander or parsley

Method of preparation :

Grease a grill or grill pan with olive oil. Cut the avocados, remove the stone and pour olive oil over them, squeeze a little lemon juice on them. Season and grill them with the cut side down for about 5 minutes, until black streaks form on the surface. Remove from the grill.

Prepare the salad: rinse the quinoa and put it in a saucepan, pour 2 cups of water and add a pinch of salt. Boil for 15 minutes, until ready, watch so as not to overcook it. Stir with a fork and cool for 10 minutes.

In a bowl, mix olive oil, vinegar, maple syrup, mustard, cumin salt and pepper.

In a large bowl, place the quinoa, cucumber, pepper, corn, beans, basil and coriander (parsley). Drizzle with the dressing and season to taste.

Fill the avocado with a spoonful of salad and serve extra.
