Required products :

  • 3 tablespoons + 1/2 teaspoon olive oil
  • 4 chicken breasts with skin
  • salt and pepper
  • 2 lemons
  • 4 cloves garlic, mashed
  • 3 sprigs of thyme
  • 1 teaspoon pitted green olives

Method of preparation :

Dry the breasts and season them with salt and pepper. Leave them to stand for 30 minutes to 1 hour at room temperature.

Cut one lemon into thin slices. Put half a slice in a bowl and add garlic and 1 tablespoon of olive oil, stir and season with salt and pepper.

Save the other slices for serving.

Cut the second lemon and squeeze its juice into a glass, set aside.

Dry the meat again (because of the salt it will have released more water) and spread it with 2 tablespoons of olive oil.

Turn on the grill to heat up.

Bake the lemons with olive oil and garlic for 2-3 minutes, transfer to a plate.

Bake the meat for about 15-20 minutes on each side, until done. Transfer it to a cutting board and let it rest for 10-15 minutes.

Then cut it and place it on a serving platter.

Put the roasted lemon slices on top, sprinkle with thyme, olives and lemon slices, which you have kept fresh.

Season with salt and pepper and pour lemon juice and olive oil.

Leave for at least 15 minutes (up to 1 hour) to combine the flavors.
