Heat about two liters of water in a saucepan and add the chopped beef. Boil for about an hour and a half and strain the liquid. Cool and strain the broth.
In another deep pan, heat olive oil and fry onions, meat, mushrooms, carrots and tomatoes. Season with thyme, rosemary and bay leaves. Stir, add the kale leaves, meat broth and season the soup with salt and pepper.
