A good start to the day is very important if you want to have energy for the whole day. In addition, a complete breakfast is important for a healthy weight. Here is our suggestion for a delicious and satisfying first course of the day.

Heat the fat over medium heat in a large skillet.
Peel and cut the potatoes into small cubes and place them in the pan. Add the finely chopped white part of the green onion, season with a quarter teaspoon of salt and 2 teaspoons of apple cider vinegar. Stew for 10 minutes, stirring occasionally.
Cut the sausage into circles and put it in the pan, cover with a lid and cook until the potatoes are completely cooked - about 3-5 minutes.
Remove the lid and continue to fry until a light caramel crust is obtained on the potatoes. Add the beet leaves, chop and add the green onion feathers, add the remaining vinegar, salt and rosemary. Cook for another 2 minutes until the water evaporates from the vegetables.
Cover and set aside.
Meanwhile, in a deep frying pan, put water to cover the bottom by about 2 cm and bring to a boil. Knock the eggs directly into the water and reduce the heat. Cover with a lid and simmer until the eggs are cooked. Remove them with a slotted spoon.
Serve the dish in two plates, spreading the vegetable mixture, put the eggs on top and salt with Himalayan or sea salt.
