Necessary products:

For the dough:

80 grams of flour

100 grams of powdered sugar

30 grams of granulated sugar

75 grams of almonds

100 grams of butter

150 grams of dark chocolate

4 eggs

For the stuffing:

200 grams of cherry jam

For the glaze:

150 grams of dark chocolate

Method of preparation:

Beat the butter, gradually adding the powdered sugar and beat until fluffy. Separate the egg whites from the yolks, return the egg whites to the refrigerator, and add the egg yolks to the butter and mix with a mixer. Melt the chocolate in a water bath, grind the almonds and gradually add these ingredients to the yolk mixture with the butter. Add the flour.

Remove the cold egg whites from the refrigerator and beat them in a completely dry container, taking care not to leave any yolk. Start beating first on low speed without sugar, then increase the speed to maximum and add the sugar in portions without stopping the stirring.

Mix the resulting protein mass with the chocolate dough, mix carefully and pour into the greased form (you can cover the bottom with baking paper).

Put the loaf to bake in an oven preheated to 170 degrees for 50 minutes. Then take it out and let it cool (while it's hot, don't do anything with it). When this happens, cut it in two, spread the bottom with cherry jam (or another of your choice) and cover the top with the second half.

Make the icing: melt the chocolate in a water bath, add two tablespoons of warm water, stir and apply on the cake. Wait a while before you start decorating. Decorate as desired.
