- 2 egg yolks
- 3 tablespoons lemon juice, freshly squeezed
- 1 teaspoon olive oil
- 1 teaspoon mustard
- salt and pepper to taste
Method of preparation :
- In a medium glass bowl, mix the egg yolks, lemon juice and mustard.
- Start beating with a mixer on high speed, adding olive oil very slowly. Be patient, as the olive oil will separate if you add it too quickly.
- When the mayonnaise thickens, season it with salt and freshly ground black pepper.
- Stir and transfer to a clean glass jar.
- Seal tightly and store in the refrigerator.
