Required products :

300 grams of flour
100 grams of semolina
2 egg yolks
1 teaspoon sugar
1 teaspoon olive oil
pinch of salt
1/2 teaspoon
leavening agent 1/2 teaspoon dry yeast
sweetened warm water (about 800 - 850 milliliters)

For the sauce:

90 grams of butter
7 tablespoons honey


Method of preparation :

In a suitable bowl, mix the flour with the semolina, add a pinch of salt, a teaspoon of sugar, yeast and baking powder. Then add the yolks and gradually start pouring from the water. At the same time, beat with a mixer (about 2 minutes) until you get a consistency like dough for thin pancakes. Cover and leave to rise (minimum 45 minutes, maximum - hour).

Make the sauce by mixing the honey and butter to melt the combination.

When the dough rises, scoop it out and pour into the middle of a cold pan. Heat it up. It is not necessary to pour oil, it is enough to lubricate the bottom of the vessel before pouring the mixture. For this purpose, use a greased napkin, for example.

 

It is important not to mix the dough intensively, but lightly and only when necessary.

Bubbles will form on the surface. Bake on medium heat on one side only.

 

When you take out the finished pancake, rinse the pan under a stream of cold water and hold for about 15 seconds until it cools. Then move on to baking the next portion.

 

The pancakes are made quickly. They are ready as soon as the surface stops sticking to the hands. Do not turn on the other side and the dough is not spread over the entire bottom of the pan, as with standard pancakes. If it is too thick, no bubbles will form.

When removed from the pan, grease with butter-honey sauce.
