How To Cook Jamie Oliver's Recipes: Pearls With Avocado And Feta Cheese - Recipe

Required products :

  • 1 teaspoon cumin
  • 250 grams of self-swelling flour, wholemeal
  • 3/4 teaspoon baking powder
  • 250 grams of yogurt
  • olive oil

For garnish :

  • 2 ripe avocados
  • 75 grams of feta mermaid
  • salt and freshly ground black pepper
  • 100 grams of yogurt
  • 1 teaspoon sweet chili sauce

Method of preparation :

  • Heat a pan over medium heat and lightly toast the cumin without adding fat.
  • Transfer the seeds to a bowl and add the flour, baking powder and 250 grams of yogurt. Stir briefly.
  • Take the dough out on a floured surface and knead it until it becomes soft and smooth.
  • Place it in a lightly greased bowl, cover with a damp cloth and set aside.
  • Peel a squash, grate it and slice the avocado. Then transfer it to a bowl.
  • Crush the cheese on top, sprinkle with olive oil and season with salt and freshly ground black pepper to taste.
  • In another bowl, lightly stir the sweet chili sauce into the yogurt.
  • Divide the dough into 8 equal balls and roll each of them on a floured surface to a thickness of about 3 millimeters.
  • Heat a ribbed pan with a non-stick coating over high heat.
  • Bake the pearls for about 2-3 minutes, turn and bake for another 1-2 minutes.
  • Coat them with olive oil while still warm and serve with avocado salad and seasoned yogurt.
