Necessary products / for 1 portion / :

  • 2 eggs
  • 2 tablespoons flour
  • 2 tablespoons fresh milk or water
  • salt to taste
  • 2 tablespoons fresh parsley, finely chopped
  • 1/3 tea cup feta cheese, crushed
  • freshly ground black pepper to taste
  • a few flakes of cayenne pepper
  • 1 tablespoon butter

Method of preparation :

  • Beat the eggs in a bowl and add the flour. Stir well.
  • Add the milk or water and stir again.
  • This is the basic recipe for kaigan. You can roast the omelet and sprinkle it with feta and parsley or continue with the next steps.
  • Add parsley and feta cheese and season with black and hot red pepper. Stir.
  • If the cheese is not salty enough, add a little salt to taste.
  • Melt the butter in a pan over medium heat.
  • Add 1/2 tea cup of the mixture if you want to make several mini omelets or the whole mixture for one large omelet.
  • Cook for about 3-4 minutes on one side until golden brown, turn carefully and bake for another 2-3 minutes on the other side.
  • Serve the scrambled eggs warm, garnished to taste.
