Required products :

  • 1/2 cup potato starch
  • 3/4 tea cup cornflour
  • 3 tablespoons sugar
  • 1 1/2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 2 large eggs
  • 3 tablespoons melted butter or vegetable oil
  • 3/4 to 1 teaspoon of milk
  • 2 tablespoons grated lemon peel or 1/2 teaspoon lemon oil
  • lubricating oil

Method of preparation :

  • In a deep bowl, mix the potato starch, cornflour, sugar, baking powder and salt. Stir.
  • In another bowl, beat the eggs and add the milk, melted butter and grated lemon zest.
  • Gradually pour the mixture into the dry ingredients and stir. The dough should be thinner than the classic pancake dough, so you may need to add a little more milk.
  • Heat a frying pan over medium heat and grease the bottom with oil.
  • Pour 2-3 tablespoons of the mixture and bake the pancakes for about 1-2 minutes on each side until golden brown. Repeat with the remaining dough.
  • Serve the lemon pancakes warm, garnished with your choice.
