Required products :
- 2 teaspoons sugar
- 1/2 teaspoon butter at room temperature
- 5 eggs
- 1 cup fresh milk
- 1 tablespoon wheat flour
- 1 tablespoon corn flour
- pinch of salt
- 2 tablespoons lemon zest, finely grated
- 1/4 tea cup freshly squeezed lemon juice
- 2 pieces of oil crust for pies
Method of preparation :
- Preheat oven to 180 degrees.
- In a large bowl, beat the sugar and butter with a mixer for 1 minute.
- Add the eggs and continue to beat until fluffy.
- Add the milk, both types of flour, salt, lemon zest and freshly squeezed lemon juice. Stir.
- Place the oil crusts in 2 round shapes about 23 cm in size.
- Divide the mixture evenly in the two crusts and bake for 35-40 minutes until golden.
- Allow the lemon pie to cool to room temperature before slicing and serving.
