Required products :

  • 3 teaspoons olive oil
  • 900 grams of tomatoes (fresh or canned in their own juice)
  • 2 cloves garlic
  • 2 tablespoons basil
  • 1 onion
  • 1 small carrot
  • 2 teaspoons dried oregano
  • salt at will and to taste
  • white pepper to taste
  • 2-3 bay leaves

Method of preparation :

If you use fresh tomatoes, first scald them with boiling water and peel them.

Finely chop the garlic, onion, basil and tomatoes, grate the carrots.

Heat olive oil in a thick-bottomed saucepan and fry the onion and garlic over medium heat until soft. Then add basil, oregano, white pepper, tomatoes along with their juice, bay leaves. Add salt if desired. Let everything simmer on low heat for 40 minutes, stirring constantly.

Distribute the finished sauce in jars and store in the refrigerator. You can also freeze.
