Necessary products:
3 kilograms of garlic
1.5 liters of vinegar (4.5%)
100 grams of sugar
1 tablespoon coarse salt
2 teaspoons finely chopped red hot pepper
1 teaspoon dried oregano
1/2 teaspoon celery seeds
Black pepper grains
Bay leaf
ice cubes
Method of preparation:
Peel the garlic and put it in a saucepan with water in which you will blanch it. Take a large bowl, put ice cubes and fill it halfway with water. The garlic should stand for exactly 60 seconds in boiling water, then quickly drain it and pour the garlic into the bowl with ice until it cools completely.
Pour the vinegar into an enamel bowl, add the sugar, salt and cook until dissolved.
Distribute the spices evenly in jars (3-4 grains of black pepper and 1 bay leaf per jar). Put the cooled garlic, pour the boiling marinade and close the jars. Sterilize for 15 minutes in boiling water. After 12 hours, check the tightness of the lids by pressing them in the middle.
The garlic will be ready in a month. The longer it stays, the tastier it becomes.
