Required products :

  • 250 grams of peppers, small in size
  • 1/2 onion, cut into thin strips
  • 3 cloves garlic, peeled
  • 1/2 teaspoon olives
  • 1/4 tea cup cold pressed olive oil
  • 1 teaspoon white vinegar
  • 1/2 teaspoon salt
  • 1/2 teaspoon orange juice, freshly squeezed
  • 1/4 teaspoon lemon juice, freshly squeezed

Method of preparation :

 

  • Put the peppers in a saucepan and add the onion, garlic, olives, olive oil, vinegar and salt.
  • Stir and heat over medium heat.
  • When the mixture boils, reduce the heat and simmer the peppers for about 20 minutes until soft.
  • Remove from the heat, add the orange and lemon juice and stir gently.
  • Put the lid on the pot and let the peppers cool completely.
  • Distribute in clean glass jars, close tightly and store in refrigerator.
