Required products :

  • 3/4 tea cup of fresh milk
  • 1/2 teaspoon melted butter
  • 2 tablespoons honey
  • 2 large eggs
  • 1 teaspoon flour
  • 1 cup cornmeal
  • 1/4 tea cup sugar
  • 1 tablespoon baking powder
  • 1 teaspoon salt
  • 6 tablespoons shredded roast pork
  • 6 tablespoons grated cheddar cheese
  • barbecue sauce and cabbage salad to serve (optional)

Method of preparation :

Combine milk, eggs, butter and honey. In a separate bowl, mix the flour with the cornmeal, sugar, baking powder and season with salt.

Pour the egg mixture into the flour and cornmeal and mix until smooth.

Grease a muffin tin with 6 cups of butter or cooking spray.

Put 2 tablespoons of the mixture in each mold and distribute the meat among all the cupcakes. Cover with 2 more spoons of dough and sprinkle with grated cheddar.

Bake in the oven for 25 minutes (preheated to 180 degrees).

When serving, place a little barbecue sauce and coleslaw on each muffin if desired.

Saturated muffins can be served as a morning or afternoon snack.
