Pour olive oil into a pan with a fireproof handle. Fry the onions and mushrooms for 5-6 minutes until softened, stirring occasionally.
In a bowl, beat the eggs and egg whites, seasoned with salt, rosemary and ground black pepper.
Pour the egg mixture into the pan and cook over medium heat. When the mixture begins to tighten at the ends with a spatula, lift the edges so that the liquid eggs are poured from below. Continue cooking until the surface remains slightly moist. At this point, sprinkle with cheese and olives.
Transfer to the oven to bake for 2 minutes on high heat.
Wait 5 minutes for the dish to cool before serving.
