Required products :

  • 1 teaspoon oil
  • 2 onions, cut into thin crescents
  • 20 grams of dried mushrooms
  • 3 teaspoons vegetable broth powder (or 1 cube)
  • 300 grams of mushrooms, chopped
  • 3 cloves garlic, grated
  • 300 grams of potatoes, sliced
  • 2 teaspoons thyme (fresh)
  • 4 carrots, diced
  • 2 tablespoons parsley
  • 8 tablespoons yogurt

55 grams of crushed walnuts

Method of preparation :

Heat the fat in a pan and fry the onions for 10 minutes until browned. During this time, put 1.2 liters of water to boil and put the dried mushrooms, add the broth.

In the pan in which you fry the onions, add the garlic, mushrooms, potatoes, carrots and thyme and cook until the mushrooms are soft and browned.

Pour the contents of the pan into the pan with the dried mushrooms and broth and simmer for 20 minutes on medium heat.

Finally add parsley and pepper to taste.

Divide the soup into bowls and in each portion put 2 tablespoons of yogurt and sprinkle with crushed walnuts.
