Required products :

  • 500 grams of frozen okra
  • 3 tomatoes
  • 1/2 teaspoon water
  • 1/2 head of garlic
  • 1 onion
  • 1 lemon
  • 1/2 bunch parsley
  • salt, coriander, vegetable seasoning
  • olive oil

 

Method of preparation :

It is not necessary to defrost the okra before cooking.

Steam the tomatoes, peel them and cut the flesh into small cubes.

Peel and finely chop the onion, cut the garlic into thin slices lengthwise and mash lightly to release some juice. Finely chop the parsley.

Fry the okra in olive oil until it turns a deep golden color. Take them out on a plate.

In the same fat fry again until golden onion and garlic. Add the tomatoes to them and cook for a few minutes.

Return the okra to the pot, pour the water (you can dissolve 1 tablespoon of tomato paste in it, if you wish) and the juice of half a lemon (with its help the dish will not be slimy). Add all the spices and stir.

Close the pan with a lid and let the dish simmer for half an hour on low heat.

Okra with tomatoes can be served hot or cold.

It is appropriate to season it with pomegranate or lemon juice, sprinkle it with chopped fresh parsley.

We specified above that lemon juice is added during cooking to avoid a slimy dish. Another way to avoid this is to soak the okra in hot water with vinegar for 15 minutes before starting the heat treatment.
