This omelet has an amazing texture. It consists of a thick "pancake" of yolks with airy protein filling. According to legend, he was named after a woman named Pulyar who offered food to guests at the hotel she ran.

Minimal products, no effort and amazing results with a spectacular appearance.

 

Required products (for 1 serving) :

2 eggs
2 tablespoons milk (or liquid cream)
salt to taste

Method of preparation :

Separate the yolks and whites. Add the milk to the yolks and add salt to taste. Stir and pour into a greased hot pan.
Beat the egg whites with a pinch of salt until stiff foam is obtained.

Distribute the yolks on the bottom of the dish with a spatula (like a pancake). When the base hardens, spread the whipped egg whites on it and level the surface.
Reduce the heat to a minimum and close the pan with a lid. Fry for 7-10 minutes.
The omelet is ready when the protein stops sticking to your fingers when touched.
Fold in half and serve.

 
You can prepare a sweet version by putting pieces of fruit between the yolks and whites.
