Required products :

  • 1/3 tea cup of orange juice, freshly squeezed
  • 2 tablespoons orange peel, finely grated
  • 2/3 cup of buttermilk
  • 6 tablespoons unsalted butter, melted
  • 1 large egg, lightly beaten
  • 2 teaspoons flour
  • 1 cup + 2 tablespoons sugar
  • 3/4 teaspoon salt
  • 1 teaspoon cinnamon
  • 1 teaspoon baking powder
  • 1/4 teaspoon baking soda
  • 1 cup fresh or dried blueberries, cut in bulk
  • 1/2 cup walnuts, chopped in bulk

Method of preparation :

 

  • Preheat the oven to 180 degrees and grease a rectangular loaf pan with butter.
  • In a small bowl, combine the orange juice, grated orange peel, buttermilk, butter and egg. Stir and set aside.
  • In a large bowl, combine the flour, sugar, salt, cinnamon, baking powder and baking soda.
  • Add the liquid ingredients and mix with a wooden spoon or rubber spatula without overdoing it.
  • Add the blueberries and walnuts and stir briefly to distribute evenly.
  • Pour the dough into the prepared form and bake for 50-60 minutes or until a toothpick comes out clean from the center of the cake.
  • Allow the orange cake to cool briefly before removing it from the pan.
  • Cut and serve with a smile.
