How To Cook Potato Nests With Beans, Vegetables And Nuts - Recipe

Necessary products

About the nests:

  • 6 medium-sized potatoes
  • pinch of sweet red pepper (ground)
  • a pinch of herbs
  • head of garlic
  • salt to taste
  • 40-50 grams of butter


For the stuffing:

  • 1/2 teaspoon dried beans
  • 4 small tomatoes
  • 1/4 hot pepper
  • clove garlic
  • 1 tablespoon oil
  • 1 small eggplant
  • 1 small sweet pepper
  • 6-7 stalks of fresh parsley
  • 4-5 nuts
  • salt to taste


Method of preparation :

Soak the beans in water for 8-12 hours, so it will cook faster. Boil the beans until ready, adding salt.

Meanwhile, roast the tomatoes, sweet peppers, eggplant and garlic (do not peel the head, just cut it in half).

Wash the remaining products and wrap in foil, put them in a pan with the two halves of the garlic head.

Place in the oven. After 10-15 minutes, remove the tomatoes, and 5-7 minutes later the peppers and eggplant. When half an hour has passed since the beginning of baking, remove the garlic head.

Peel and cut the potatoes into small pieces. Fill them with cold water and cook for about 30 minutes, be sure to add salt 10 minutes after boiling.

Peel an eggplant and cut it into cubes. Do the same with the sweet already roasted pepper.

Peel a squash, grate it and squeeze the juice. Mix half of the porridge with the vegetables, and the rest will be needed to stew the beans.

Pour the cooked beans into a pan, pour the tomato puree over them, add salt, season with spices of your choice and stew for 10-12 minutes, stirring.

Crush the walnuts, parsley and garlic clove in a mortar or grind with the help of a food processor.

Finally, mix the stewed beans with the roasted vegetables and aromatic nuts. The stuffing for the nests is ready, now it's time to start making them yourself.

Peel a roasted clove of garlic, pour over the boiled potatoes, add the red pepper, a pinch of herbs of your choice, a pinch of salt. Add the butter and mash until smooth. Do not use a blender, because the result will be a sticky mass.

Cover the bottom of the tray with a sheet of parchment paper. Form "nests" of mashed potatoes directly into the dish. Bake in a preheated 200 degree oven until covered with an appetizing golden crust.

As soon as this happens, take them out immediately and fill them with vegetable mixture.
