Required products :

700 grams of potatoes

300 grams of zucchini

6 tablespoons olive oil

1 bunch green onions

100 grams of olives

100 grams of feta cheese, sheep or other suitable

a pinch of thyme

salt and pepper to taste

 

Method of preparation :

Cut the zucchini into small cubes, wash the potatoes, peel and also cut into cubes.

Heat olive oil and fry the potatoes in it for a few minutes. Then add the zucchini and fry together for 20-30 minutes, stirring occasionally.

While the vegetables are frying, cut the selected cheese.

Cut the olives in half and remove the stones, chop the green onions.

At the end of cooking the vegetables, add salt, pepper and thyme. Finally onions and olives.

Stir and leave the dish on the hob, closing the container with a lid to absorb the aromas.

Five minutes later you can spread on a plate and serve with pieces of cheese.
