Required products :

  • 1 tablespoon olive oil
  • 450 grams of thin sausages
  • 3 cloves garlic, pressed
  • 1 onion, finely chopped
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon dried basil
  • 1/2 teaspoon paprika
  • salt and freshly ground black pepper
  • 5 teaspoons chicken broth
  • 1 bay leaf
  • 450 grams of diced red potatoes
  • 3 teaspoons baby spinach
  • 1/4 teaspoon cream

Method of preparation :

  • Heat olive oil in a large saucepan over medium heat.
  • Cut the sausages into pieces about 3 cm in size and fry them for 3-5 minutes.
  • Add garlic, onion, oregano, basil and paprika. Cook for about 2 minutes, stirring often, until the onion is soft.
  • Season with salt and freshly ground black pepper and add the broth and bay leaf.
  • Once the soup boils, add the potatoes and simmer for about 10 minutes.
  • Add the spinach and after about 1-2 minutes add the cream.
  • Stir, cook for another 1-2 minutes and season again with salt and pepper to taste.
  • Divide the soup into bowls and serve hot.
