How To Cook Puff Pastry Pie With Cauliflower, Leeks And Cheddar Cheese - Recipe

Ingredients :
1/2 tablespoon olive oil

  • 2 red onions
  • 2 teaspoons balsamic vinegar
  • 1 teaspoon brown sugar
  • 1 teaspoon cut thyme
  • 600 grams of cauliflower, chopped into small pieces
  • 40 grams of butter
  • 1 tablespoon flour
  • 300 milliliters of fresh milk
  • 100 grams of grated cheddar cheese
  • 3 stalks of leeks (about 380 grams), cut
  • 2 sheets of puff pastry, 400 grams each

Method of preparation :

Heat olive oil over medium heat and fry the onion, which you have previously cut, until soft - about 6-8 minutes. Add the balsamic vinegar, sugar and thyme. And continue to cook for 10-12 minutes until it begins to caramelize.

Blanch the cauliflower in boiling water for 8-10 minutes until soft.

Prepare the cheese sauce - melt 20 grams of butter in a small saucepan. Add the flour to it and stir for 3-4 minutes until combined and the mixture becomes golden. Add the milk to the sauce, stirring constantly. When the sauce thickens, add 80 grams of cheese to it. Remove from the heat and set aside.

Melt the remaining 20 grams of butter and fry the leeks until soft.

Preheat oven to 180 degrees.

Roll out one sheet of puff pastry and cut a circle with a diameter of 26 cm and put it in a pan with the same diameter.

Put the onion in the pan on the dough, leaving about 1.5 cm from the edges of the dough without the filling. Cover with cauliflower, the remaining cheddar, and put leeks on top.

Smear the edges of the dough with water.

Roll out the second sheet of puff pastry and cut a circle with a diameter of 30 centimeters. Cover the filling with it and press the edges of the two sheets of dough to stick to each other.

With a sharp knife, make X in the middle of the pie and bake for 35-40 minutes, until golden.
