How To Cook Pumpkin Pancakes With Caramel Sauce And Walnut Crocan - Recipe

Required products : 

For the pancakes:

  • 200 grams of pumpkin puree
  • 2 eggs 
  • 3-4 tablespoons vanilla sugar
  • 1 cup thick yogurt
  • 1 cup sifted flour
  • 2-3 tablespoons of semolina
  • lemon peel
  • 1/2 teaspoon cinnamon
  • 1 teaspoon baking soda

For the caramel sauce:

  • 2/3 cup sugar
  • 2/3 cup thick cream (30-35% fat)
  • 1/2 cup fresh milk

For the walnut crocan:

  • 1/2 cup walnuts
  • 1 teaspoon butter
  • 3 tablespoons sugar

Method of preparation :

Beat the eggs and sugar with a wire whisk. Add the pumpkin puree (it is made by baking the pumpkin in the oven and then grind with a blender) and the lemon peel. Mix everything. Then add the milk and mix well. Add the flour step by step, carefully forming a smooth dough.

Put semolina and soda (quenched in lemon juice or vinegar), mix everything and leave for 5-10 minutes for the semolina to swell.

Heat the pan, grease it with butter and bake the pancakes (2 minutes on each side is enough) until golden.

Make the caramel sauce: Pour the sugar into a deep bowl with a thick bottom, place on the stove and, stirring constantly, allow the sugar to caramelize. When the caramel becomes liquid enough (without lumps of sugar), reduce the heat and add the hot cream (it should boil and add immediately). The mixture will start to rise and bubbles will form. Stir with egg whisk and leave on the fire for another minute. Pour the prepared sauce into a bowl, let it cool. If you find it too thick when this happens, add 1/2 cup of milk and stir to obtain the desired consistency.

Make the walnut crocan by putting the sugar and butter in a cast iron pan, stir. When you get liquid caramel, immediately add the walnuts (in quarters). Let them caramelize while stirring without stopping for 2 minutes. Then pour the mixture into a tray lined with foil or in a large plate. Wait for it to cool completely and crush.

Arrange the pancakes on top of each other, pour the caramel syrup and sprinkle with walnut crocan.
