How To Cook Pumpkin Pancakes With Maple Syrup And Pecan - Recipe

Required products :

For the pancakes:

  • 1/3 tea cup of warm water
  • 1/3 tea cup dried blueberries
  • 400 grams of pumpkin puree
  • 1 cup buttermilk
  • 2 large eggs
  • 1 teaspoon vanilla
  • 2 tablespoons brown sugar
  • 1 1/2 teaspoons flour
  • 1/2 teaspoon baking powder and baking soda
  • 1 teaspoon salt
  • 1/2 teaspoon cinnamon
  • 1/3 tea cup of milk chocolate
  • 8 tablespoons butter

for maple syrup sauce:

  • 1/2 cup pecans (or walnuts)
  • 1/2 teaspoon maple syrup
  • 1/2 cube butter (about 60 grams)

Method of preparation :

Soak the blueberries in warm water for 10-15 minutes. Drain.

In a bowl, combine the buttermilk and pumpkin puree. Blend until smooth and add the eggs, vanilla, melted butter and brown sugar. Blend again.

In a large bowl, place the flour, salt, baking powder, baking soda and cinnamon. Pour the liquid ingredients and stir. Put the pieces of chocolate and blueberries.

Leave the dough for 15-30 minutes at room temperature.

Meanwhile, prepare the sauce. Roast the walnuts in a saucepan until they release their aroma - for 3-4 minutes. Add the maple syrup and butter and cook for 3-4 minutes until the mixture thickens, but the nuts should not burn. Remove from the heat and keep the syrup warm until serving.

Melt 1 tablespoon of butter in a large non-stick pan. Form pancakes, each with about 1/3 tea cup of the mixture, the pancakes should be small and fluffy.

Bake until done, then stack on top of each other.

Drizzle with sauce and serve.
